Cimply Cydni Potatoes
 
Ingredients:
1/2 cup Ranch Dressing 1/2 cup Sour Cream 1 cup Shredded Sharp Cheddar Cheese 1/2 cup Crumbled Bacon 1 dash salt 1/2 teaspoon of black pepper 2 Tbsp Minced fresh chives 4 medium-size Potatoes.

Directions: Boil potatoes and keep hot! Cook Bacon and drain grease. In medium bowl, combine Ranch dressing, Sour Cream, Chives, Bacon and 1/2 of Cheese. Cut potatoes in half and carefully scoop out half of potatoes fillings and add to mixture. Keep skin intact. Stuff potatoes skin with mixture. Sprinkle remaining cheese on top and bake at 375 degrees F for 15 minutes or until cheese has melted.
 
For Garnish: Sprinkle with Chives and sour cream. Enjoy!

Spinach Ricotta ala Ravioli

Ingredients:
*8 oz container of ricotta cheese
*1 bag of fresh spinach
*1 small package of Italian sausage (optional)
*Wonton noodles (Frozen Section)
*1 clove of fresh garlic
*Salt and pepper to taste

Directions:
Rinse fresh spinach, dry and chop
Next drizzle olive oil in a pan on medium heat
Remove the Italian sausage from its casing and place into a pan on medium heat for 5-10 minutes until brown. Break sausage into small pieces.
Boil 3 cups of water, pinch of salt and a splash of olive oil in a medium sauce pan.
Drain sausage and combine in a large bowl with 8 oz ricotta cheese, 1 clove of garlic minced, salt and pepper to taste.
Place teaspoon of mixture in center of wonton noodle. Brush water around edges of wonton and place another on top.
Crimp edges with a fork to seal.
Place in boiling water for 5-10 minutes or until wonton floats to the top.
Top with your choice of sauce.....Enjoy!
